Miguel Ángel Salom und Toni Salom beschäftigen sich mit der Helizikultur, also der Schneckenzucht. Sie haben auf „Sa Caragolera“ in Binissalem einen Zuchtbetrieb mit 1,5 Millionen Tieren. In dem 1500 Quadratmeter großen Gewächshaus geht es eher ruhig zu. Hier dominieren Reihen von gemauerten Furchen, in denen sich Unkraut sammelt. Hier tummeln sich Schnecken aller Größen und von zwei Arten: die Bover Müller, die kleinere Art und die Bover Máxima, die größere.
Seit zweieinhalb Jahren betreibt das Vater-Sohn-Gespann die Zucht. Gelernt haben Sie vor allem eines: Schnecken sind zwar genügsam, aber anfällig für Krankheiten. Daher ist die Schneckenzucht ein Fulltime-Job, Krankheiten müssen vorgebeugt werden, es muss für Ruhe gesorgt werden, die Temperatur muss stimmen, der Kot muss beseitigt werden, Salat muss ausgesät werden. Zudem müssen „reife“ Schnecken handverlesen werden.
Bei niedrigen Außentemperaturen sind die Schnecken nicht sehr aktiv, in den Sommermonaten werden sie zur Aussaat des Salates für drei Monate in einen Art künstlichen Winterschlaf versetzt. Am wohlsten fühlen sie sich dann im Frühjahr und im Herbst: dann stimmen die Temperaturen und auch sonst alles. Um die 20 Grad ist für die Schnecken perfekt. Wer sich mit der Helizikultur beschäftigt, muss im Schneckentempo vorgehen.
Werden die Tiere durch häufiges umsetzen gestresst, sterben sie. Haben die Tiere am Rand ihres Hauses eine feste Schale, sind sie reif, werden gereinigt und kommen lebend in den Verkauf. Gerade letztere Eigenschaft ist sehr gefragt, denn Tiefkühlschnecken sind oftmals sehr zäh. Gastronomen auf Mallorca wissen lebende Schnecken zu schätzen – trotz des fast dreimal teureren Preises als die Tiefkühlware im Supermarkt. Sie werden dann wie Hummer mit heißem Wasser getötet und verarbeitet – denn frische Schnecken nehmen den Geschmack der Gewürze besser an. Jedes Dorf hat sein eigenes Rezept, Schnecken haben eine große Tradition.
